What is Blanching?

You’ve probably done this: It’s submerging food, particularly vegetables, in boiling water, and then immediately rinsing them under cold water to stop further cooking. Blanching can be done to pre-cook vegetables before stir-frying, or even to remove the metallic taste from canned vegetables. You can also remove the skin from nuts by blanching.

Can hot food be added to the blender?

You should always cool the hot food before adding it to the blender, because otherwise the high heat and the closed lid could cause the lid to blow off the top.

What is Braising?

In Asian cooking, it can be described as a combined technique of stir-frying and stewing. The food is first stir-fried, and then the heat is reduced to finish the cooking. Braising can be done on the stove or in the oven, with a tight fitting lid to keep the liquid from evaporating.

How to Make Sugar Caramelized

You need 1 cup of sugar, and ¼ cup water. Place both the sugar and the water in a small saucepan. Stir together and cook over medium heat. Continuously shake the pan while cooking, until it turns to a golden color and is caramelized.
